Eddie's Seafood Market is Edinburgh's Premier Fishmonger serving fresh seafood to locals and restaurants for 37 years.

We are seeking a Fish Filleter to join our team. In this role, you will be responsible for filleting various types of fish with speed and accuracy.

Responsibilities:

Fillet fish of all shapes and sizes, including slippery salmon and tricky trout

Remove bones and other unwanted bits with the precision of a ninja

Keep your workspace clean and organized, because nobody likes a messy filleter

Work quickly and efficiently to keep up with the demands of the shop

Maintain a positive attitude, even when things get fishy

Follow all safety and security procedures, including proper handling of products

Stock management

Requirements:

A love of all things fishy

Excellent knife skills

Ability to work in a fast-paced environment (fish don't wait for anyone)

Knowledge of different types of fish and their preparation methods

An eye for detail (you don't want to accidentally leave a bone in someone's meal)

A good sense of humor (you'll need it when the fish start flopping around)

Ability to stand for extended periods of time and lift heavy objects

Flexibility to work weekends and holidays as required.
